Meet Chef Cuong
Experiences & Passionate
Chef Nguyen Nhu Cuong grew up in the typical Saigon restaurant his family ran and when he began his career, he knew he wanted to surround himself with similar flavors but add elegance and creativity so that each meal is a special occasion. After nearly 15 years working in the industry, including at four-star hotel kitchens, he developed an expertise in premium ingredients as well as Vietnamese, Japanese and Western cooking methods. A desire for complete artistic control over the menu that allows his inquisitive instincts to shine motivated him to set out on his own with Madam Lam. With respectful nods to his mom’s home cooking as well as his family’s roots in Central Vietnam, each dish seeks to expand the potential of Vietnamese cuisine. He works with his team to ensure that the elegant meals can be served in a warm and open environment that reminds guests of home.
Chef Cuong was the national runner-up of the 2015 “Golden Spoon” contest. Also in 2015, he received a bronze medal in the Talented Chef contest organized by the World Chef Association and the Chefs Association in Vietnam. In 2017, Chef Cuong continued to win the bronze medal of Catering cup Vietnam.
